Both grape varieties are harvested, vinified, and aged separately, with a 10-day cold pre-fermentation maceration, fermentation in small stainless steel tanks with indigenous yeasts, followed by 14 months of aging in seasoned French barrels. Established in 2002 in Limarí, on the edge of the Atacama Desert, Tabalí is a pioneer of viticulture in this valley. The estate crafts wines that span Chile from east to west within the same valley, from its high-altitude Roca Madre vineyard in the Andes to the coastal Talinay vineyards near the Pacific Ocean.
