This limestone terroir of marine origin, unique in Chile, benefits from a cool coastal climate where ocean breezes moderate temperatures and preserve the balance of the fruit. Hand-harvested on March 27, rigorously selected before precise vinification, 30% is fermented as whole berries in barrels. The 18-month aging in barrels, 90% of which are new, brings depth and structure. Established in 2002 in Limarí, on the edge of the Atacama Desert, Tabalí is a pioneer of viticulture in this valley. The estate crafts wines that span Chile from east to west within the same valley, from its high-altitude Roca Madre vineyard in the Andes to the coastal Talinay vineyards near the Pacific Ocean. The range is crafted by winemaker Felipe Muller and viticulturist Hector Rojas.\u003c\/p\u003e\n\u003cp\u003e\u003cbr\u003eOn the nose, intense aromas of black cherry, blueberry, and violet, enhanced by black pepper, smoky, and spicy notes. On the palate, ample and structured, with velvety tannins, supported by a beautiful freshness, with a long, complex, and harmonious finish. It pairs well with a slow-roasted shoulder of lamb with sweet spices or a grilled rib of beef with herb jus.
