The terroir is composed of very clayey soils mixed with fine limestone veins, offering the Pinot Noir power, depth, and tension. Faithful to the domain's high standards, the vines are managed using the Guyot Poussard method with precise work in the rows, in order to preserve the natural balance of the vintage.\u003c\/p\u003e\n\u003cp data-path-to-node=\"3\"\u003e\u003cstrong\u003eWinemaking\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp data-path-to-node=\"4\"\u003eThe grapes for the Pommard Vincent Girardin are harvested by hand and then rigorously sorted, sometimes with the aid of an optical sorter. After light crushing and destemming, the berries ferment in stainless steel tanks with cold maceration, careful punch-downs, and pump-overs. Aging then takes place for 15 months in barrels, about 30% of which are new wood; malolactic fermentation occurs naturally there. One month before bottling, the different barrels are blended. As always at Girardin, there is no fining and only slight filtration in order to preserve the purity of the wine.
