History
The 1965 vintage from the Cave de l’Étoile is a true witness of time, originating from the heroic Banyuls vineyard clinging to the steep schist slopes overlooking the Mediterranean. Sixty years later, this rare treasure perfectly showcases the ancestral expertise of the oldest cooperative in the region, founded in 1921. Bottled after extended oxidative aging, it is one of those vin doux naturels that embody both tradition and heritage.
Vinification
Produced from old vines of Grenache Noir, complemented by Grenache Gris and Carignan, the grapes are hand-harvested, destemmed, and crushed. Fortification (mutage) on the skins stops fermentation to preserve natural sugars. This is followed by prolonged maceration and several decades of aging in old oak casks and century-old barrels, under the influence of the sun and the Tramontane wind. This patient work has crafted a wine of unique depth.
Tasting Notes
Amber-colored robe with mahogany highlights announces exceptional aromatic complexity: walnut, toasted dried fruits, candied figs, coffee, and leather. On the palate, the balance between sweetness and freshness is striking, supported by a silky texture and a persistent finish of noble rancio. Best enjoyed in meditation, or paired with pan-seared foie gras, aged Comté, or a bitter chocolate dessert. A collector’s wine to mark special occasions.
