The Vinification
Distilled in 1973, this cognac has rested for over half a century in Limousin oak barrels, with no reduction or additives. Thanks to slow micro-oxygenation, the spirit develops a rare complexity, where fruit, wood, and chalk intertwine to produce a balance of exceptional purity.
The Tasting
The deep golden color precedes a sumptuous bouquet of dried fruits, spiced butter, stewed mango, and ginger. On the palate, the texture is ample and velvety, carried by an unexpected freshness and exotic nuances of coconut and passion fruit. La Nouvelle-Aquitaine est la plus vaste région viticole de France, s’étendant de Poitiers à Pau, en passant par des territoires emblématiques comme Bordeaux, Cognac, Agen ou Bergerac. Elle abrite une diversité de terroirs exceptionnelle, portée par des siècles de savoir-faire viticole et distillatoire, qui en font le berceau de spiritueux parmi les plus renommés au monde.
Au nord, en Charente et Charente-Maritime, on élabore le célèbre Cognac, issu de la double distillation de vins blancs, et le Pineau des Charentes, un vin de liqueur alliant moût de raisin et jeune cognac, apprécié pour sa fraîcheur et sa rondeur.
Plus au sud, dans le Gers, les Landes et le Lot-et-Garonne, on produit l’Armagnac, la plus ancienne eau-de-vie de France. Distillé traditionnellement en alambic continu, il se décline en trois zones : Haut-Armagnac, Ténarèze et Bas-Armagnac. Ces trois terroirs reposent sur le cône alluvial de Lannemezan, un sol ancien formé de sables, argiles et galets, issus de l’érosion des Pyrénées. Ils donnent naissance à des eaux-de-vie expressives, élégantes et nuancées, aux arômes de fruits mûrs, d’épices douces et de fruits secs, révélés au fil du vieillissement en fût.
