Savage Wines
In an urban cellar in Salt River, Cape Town, Duncan Savage makes wines that are anything but savage in their nature. Purity, finesse, saline minerality : these are the words that recur when people speak of Savage Wines. Since 2011, this winemaker, nicknamed "Mr. Sauvignon Blanc" by his peers, has been scouring the Western Cape in search of high-altitude or maritime-influenced parcels, often unusual, always remarkable.
History / Heritage
Duncan Savage honed his expertise over fourteen seasons as cellarmaster at Cape Point Vineyards, where he accumulated five-star ratings from the Platter guide. There, he developed an intimate understanding of coastal sites and high-altitude terroirs. In 2011, he launched Savage Wines alongside his primary role, a common practice in South Africa, where talented young winemakers build their reputations without the weight of property investment. Critical success was immediate. In 2016, bolstered by this recognition, he left Cape Point and set up in his own cellar in Salt River. Eben Sadie, widely regarded as the Cape's greatest reference, readily names Duncan as one of the finest talents of his generation.
The Terroir
Savage Wines is not a domaine in the classical sense: Duncan owns no vineyard of his own, but forges long-term partnerships with winegrowers cultivating carefully selected parcels throughout the Western Cape. The common thread? Granite and the sea. The Syrahs come from a residential vineyard in Stellenbosch on decomposed granite soils. The Grenache from Piekenierskloof, the same parcel that Eben Sadie uses for his Soldaat, yields a highly sought-after cuvée, Thief in the Night. The Sauvignon Blanc and Sémillon come from old coastal vines. Each site contributes its own signature: salinity, mineral tension, freshness.
Viticulture and Winemaking
Duncan Savage's motto says it all: "Do as little as possible, as much as you can." Manual harvests from very low-yielding parcels, spontaneous fermentations, the use of large oak casks and locally crafted clay amphoras to preserve tension and texture without marking the wine with wood. Red varieties sometimes benefit from whole-cluster inclusion. Duncan takes a close interest in ceramics: he fires his amphoras at high temperatures to render them near-inert, closer to concrete, so as to capture the purity of the fruit. Organic certification is not claimed, but the spirit of the practices is: minimal sulphur, indigenous yeasts, no systematic filtration.
Wines / Key Cuvées
Girl Next Door is the estate's emblematic Syrah cuvée, a wine from a residential vineyard in Stellenbosch, planted for decorative purposes, yet producing one of the Cape's finest Syrahs: white pepper, black olive, floral and silky all at once. Thief in the Night, an assemblage of Piekenierskloof Grenache, evokes the finest cuvées of the southern Rhône in its airy, luminous character. The Salt River Sauvignon Blanc, from old vines in Stellenbosch and Walker Bay, is saline, herbaceous, and of remarkable length, the very definition of what Duncan does better than anyone else in South Africa.
Savage Wines is the story of a surfer-turned-winemaker who learned to listen to the wind and read the rock, and who, from Salt River, produces some of the most singular wines on the African continent.
