The "Autolyse" cuvée is a homage to time and the biological phenomenon that shapes great Champagnes. Autolysis corresponds to the progressive degradation of yeasts after the secondary fermentation (prise de mousse), releasing molecules that bring richness and complexity to the wine. This rare cuvée comes from plots in the Côte de Sézanne with clay and chalk soils, capturing the essence of a patient terroir.
This Champagne is a true time capsule: crafted on a 2008 vintage base (86% Pinot Noir, 14% Chardonnay) with the tirage (bottling for secondary fermentation) carried out in June 2009. It benefited from an extraordinary aging of 14 years in the cellar, allowing a prolonged interaction between the wine and its lees. The vinification was done in stainless steel tanks with malolactic fermentation carried out.
The result is a wine of unheard-of depth, celebrating the imprint of time on the wine. With a Brut dosage at 8 g/l, it develops fascinating tertiary aromas (brioche, mocha, dried fruits) and a richness on the palate characteristic of prolonged autolysis. A meditation wine or a wine for fine dining (haute gastronomie), to be reserved for moments of exception.
