Situated in the hollow of the Sézannais hillsides, the Le Brun de Neuville vineyard benefits from an ideal south-east exposure on chalk and clay soils. The Côte Blanche cuvée is the identity interpretation of this terroir: an enlightened blend of Chardonnays sourced from vines averaging 45 years of age, capturing the specific solar energy of this Champagne region.
To preserve the purity of the fruit while adding complexity, this Blanc de Blancs is primarily vinified in stainless steel tanks, complemented by 8% in oak barrels. The blend integrates 28% of reserve wines to ensure consistency of style. The wine then benefits from a prolonged aging of 31 months on lees, well beyond the standards, allowing the aromas to refine before a Brut dosage at 7 g/l.
Upon tasting, Côte Blanche reveals itself as a pulpy and solar Champagne, typical of the Côte de Sézanne. It offers a chalky mineral framework, softened by time, with a creamy texture. It is an ideal opening Champagne, perfect for the aperitif or to accompany seafood thanks to its balance between aromatic richness and saline freshness.
