History
Founded in 1895, Maison Cazes is today a benchmark in Roussillon and a pioneer of organic and biodynamic viticulture. The 1975 vintage, from the Rivesaltes vineyards on clay-limestone and schist soils, pays tribute to Aimé Cazes. Aged for over 40 years in oak casks, it embodies the tradition of the estate’s great natural sweet wines.
Vinification
Hand-harvested, destemmed, and lightly crushed, the Grenache (Blanc and Gris) and Macabeu grapes are pressed before mutage. Fermentation is halted by the addition of grape spirit, preserving the natural sweetness of the grapes. Extended oxidative aging in old oak casks has shaped a timeless cuvée, awarded 19/20 by RVF and 18/20 by Bettane & Desseauve.
Tasting Notes
Its amber color with mahogany highlights reveals a complex nose of caramel, quince, prune, candied fruits, and coffee. The palate is full and silky, offering a masterful balance between sugar and alcohol, with a finish reminiscent of aged rum. Best enjoyed with a walnut and chocolate cake, matured blue cheeses, or simply as a contemplative digestif.

Le Rivesaltes est l’un des grands vins doux naturels du Roussillon. Issu principalement de Grenache, Macabeu et Malvoisie, il se décline en styles ambrés, tuilés, grenats ou rosés.
