The M3 Chardonnay is Shaw + Smith's iconic cuvée, the benchmark of the Adelaide Hills. Crafted with an obsession for elegance, restraint and ageability, this Chardonnay embodies the fresh, precise style of this high-altitude region in southern Australia.
The winemaking behind the M3 Chardonnay 2023 prioritises precision and texture. The grapes are hand-harvested and whole-bunch pressed. Fermentation takes place in high-quality French oak barrels, followed by approximately nine months of ageing, including malolactic fermentation. The final blend is assembled in stainless steel tanks before bottling, preserving the purity of the fruit and the wine's overall balance.
On the palate, the M3 Chardonnay stands out with an elegant nose of white flowers, citrus and nectarine, with subtle hints of ginger and orange zest. The palate is at once generous and taut, structured without heaviness, carried by brilliant acidity and a silky texture. A contemporary Chardonnay that is both alluring now and built to age (through to 2030). It pairs beautifully with seafood, white-fleshed fish, light Asian cuisine, or soft cheeses such as brie or camembert.

Although less well known than Mendoza, San Juan stands out among Argentina's great vineyards. Located in the west of the country, at the foot of the Andes, this region enjoys a desert climate ideal for viticulture. The winemakers of San Juan produce wines of great personality, with Syrah as the flagship grape variety, giving intense, spicy reds. Excellent Malbec, Cabernet Sauvignon and Chardonnay are also found here, reflecting the arid, sun-drenched terroir. Thanks to the altitude and temperature variations, the grapes develop good concentration and fresh acidity, making for well-balanced, long-keeping wines.
