History
The 1960 vintage from Domaine Singla is a true witness of time. Crafted using the ancestral mutage method, discovered in the 13th century by Arnau de Vilanova, it has preserved all the natural sweetness of the grapes. A patiently crafted work, rare and precious, ideal as an exceptional gift to mark a symbolic year.
Vinification
After direct pressing of Grenache Blanc, Grenache Gris, and Macabeu, fermentation was halted by mutage with neutral alcohol, preserving the natural sugars. This old Rivesaltes then rested for over 40 years in oak casks, developing noble oxidative notes. A long refinement in glass demijohns followed to enhance its complexity and aromatic depth.
Tasting Notes
The amber color reveals old-gold highlights. The nose opens with sweet spices and mocha, joined by hints of rum brandy. The palate is broad and balanced, unfolding flavors of dried fruits, candied peel, and blond tobacco, carried by a remarkable length.
A contemplative wine to enjoy at the end of a meal, or paired with seared foie gras, almond pastilla, aged Cantal cheese, or a chocolate-coffee dessert.
