This smooth blend (cuvée) honors Maxime Blin’s grand-father, Robert, the “optimist” winemaker who took the risk of planting Pinot Noir in the sandy soil dedicated to Pinot Meunier. Combining 80% of his favorite red grapes with 20% of Chardonnay this champagne ages 36 months in the bottle. Its lingering earthy finish will pair very well with oysters and shellfish.
