Kanonkop Estate Cabernet Sauvignon 2018 is the pure expression of Cabernet Sauvignon from the Simonsberg terroir in Stellenbosch. Sourced from vines aged approximately 26 years old on decomposed granite soils, this 100% Cabernet Sauvignon was vinified in open concrete fermenters with manual punching down every two hours, then aged for 24 months in French Nevers oak barrels (50% new, 50% second-fill). The 2018 vintage was distinguished by warm and dry conditions leading up to harvest, tempered by cool nights that favored natural acidity.
On the nose, the wine reveals aromas of cassis, oak spice, graphite, earth, and damp tobacco. The palate is full-bodied and remarkably elegant, driven by fine, tight tannins framing notes of morello cherries, raspberries, and coffee beans. A wine built for long aging, ideally opened from 2025 onwards and kept through 2035 and beyond. It will perfectly accompany steak, slow-cooked venison, braised beef short ribs, or matured hard cheese.
