Kanonkop Estate Paul Sauer 2021 is a legendary blend from Simonsberg (Stellenbosch), composed of 69% Cabernet Sauvignon, 17% Cabernet Franc, and 14% Merlot, sourced from approximately 30-year-old vines on granitic, Hutton, and Clovelly soils. Fermented in open concrete tanks with manual punch-downs every 2 hours for 5 days, and then aged for 24 months in 100% new 225L French oak barrels, it features 13.5% alcohol and 3.2 g/L of residual sugar.
On the nose, complex aromas intertwine oaky, floral, and spicy notes. On the palate, elegant and well-structured, with perfectly integrated tannins that give it a sense of finesse. Pairings: roasted leg of lamb, beef stew. Aging potential of 20 to 25 years.
