The essence of Mitolo Wines is rooted in centuries of agricultural and winemaking tradition. Originally from the Abruzzo region of Italy, the Mitolo family emigrated to Australia in the 1950s, bringing with them an unwavering work ethic and a deep connection to the land. Embodying the Abruzzo motto — forte e gentile (strong and gentle) — their Italian-Australian heritage sits at the heart of their quest to create remarkable wines, full of character and elegance.
Serpico is a wine unto itself — a Cabernet Sauvignon crafted using the traditional Appassimento technique, a direct expression of the Mitolo family's Abruzzo roots. Hand-harvested from the Home Block in Whites Valley, the grapes are dried for 34 days under controlled conditions, losing 30% of their weight. Exceptional concentration of aromas, naturally softened tannins, a wine of rare depth. Aged 18 months in French oak (80% new). On the nose, black truffle, mushroom, fig confit, dark cherry. The palate is sumptuous, refined, impressively long.
At the table: game, roasted rib of beef, powerful cheeses such as aged Comté or mature Pecorino.
Australia
The McLaren Vale wine region, located just south of Adelaide, is very highly regarded throughout both Australia and the world. Shiraz leads the region's list of award-winning wines, making McLaren Vale a favorite location to grow this grape. Cabernet Sauvignon is another prominent grape variety, along with Grenache and Mourvedre which, together with Shiraz, make up some of the most acclaimed GSM blends here. Chardonnay and Sauvignon Blanc dominate McLaren Vale's white grape varieties, with a plethora of other regional and international specialties such as Merlot, Zinfandel, Tempranillo, Sangiovese and Viognier also making their mark.
