DESCRIPTION
Aristargos is the flagship white wine from the David & Nadia estate, a complex blend led by Chenin Blanc and complemented by Sémillon, Verdelho, Clairette Blanche, Roussanne, Grenache Blanc, Marsanne, Colombar, and Viognier. The grapes are sourced from 21 parcels of old vines planted between 1960 and 2013 on the granite soils of the Paardeberg, in the Swartland. Whole-cluster pressed, naturally fermented, then aged for approximately eleven months in old foudres and barrels as well as concrete tanks.
The nose reveals notes of ripe apple, lemon, honey, and quince, with a hint of citrus peel and tangerine. The palate, ample and saline, gives way to savory touches of pistachio and green olive, underpinned by a fine acidic structure and a long, indulgent finish. Serve at around 12°C with roasted poultry or pressed-paste cheeses.
