Henschke Cyril Henschke Cabernet Sauvignon 2018 is sourced from the most famous vineyard in the Eden Valley and bears the name of Stephen’s father, Cyril Henschke, a pioneer of Australian winemaking. 97% Cabernet Sauvignon, 2% Merlot, and 1% Cabernet Franc, from vines over 60 years old, cultivated according to the principles of biodynamics. Aged for 10 months in French oak barrels (including 10% new wood). It features 14.5% alcohol, a pH of 3.56, and 6.5 g/L of total acidity. Aging potential of 25 years and more.
On the nose, a complexity between blackcurrant, redcurrant, and blackberry, interwoven with anise, oregano, thyme, violet, and tobacco leaf. On the palate, a beautiful liveliness and fine tannins offer a long, defined, and enveloping finish. Pairs with a roasted duck breast or a rack of lamb with herbs.
