Stark-Condé Wines

Deep in the spectacular Jonkershoek Valley, framed by mountains classified as a UNESCO World Heritage Site for their fynbos biome, Stark-Condé produces wines of rare precision and intensity. José Conde, a self-taught American who settled in South Africa for love, planted his first vines here in 1998 with a simple conviction: let the terroir speak, without artifice. The result, a confidential production of some 8,000 cases per year, earned him the designation of "Premier Cru of South Africa" from critic Tim Atkin MW. 

History / Heritage 

Born in Missouri, José Conde came to South Africa to be closer to his wife's family. The estate's name merges their two family names, a symbolic union that reflects the house's philosophy. From 1998, he vinified his first Cabernet Sauvignon from a single Jonkershoek parcel in a rudimentary cellar. The first cuvées immediately won over local enthusiasts, and word of mouth, the estate's sole communication channel, built Stark-Condé's reputation without advertising. Decanter Magazine would later describe the estate as a "New World Trailblazer Redefining Fine Wine." 

The Terroir 

Jonkershoek is one of Stellenbosch's coolest sub-appellations: annual rainfall reaches 1,200 mm, nearly double the local average, thanks to the orographic effect of the mountains that enclose the valley. The south-easterly winds, blowing in summer, naturally reduce disease pressure and vine vigour. The soils, composed of decomposed granite on the upper slopes and clay on the flatter areas, favour a structured Cabernet Sauvignon with firm tannins and remarkable longevity. 80% of the estate remains as untouched land, joining the Jonkershoek National Park. 

Viticulture and Winemaking 

Stark-Condé is certified organic. In the cellar, José practises the most traditional winemaking possible: manual sorting, fermentation in open vats with indigenous yeasts, hand plunging every few hours, basket pressing, and ageing for up to 22 months in French oak barrels. The wines are most often bottled without fining or filtration. For the Chenin Blanc cuvée, vinification in hand-crafted clay amphoras and neutral barrels simultaneously delivers texture and freshness. The Three Pines range, single-parcel selections, represents the pinnacle of the house. 

Wines / Key Cuvées 

The Stellenbosch Cabernet Sauvignon is the backbone of the estate: a blend of several Jonkershoek parcels with small proportions of Bordeaux varieties, it offers a palette of blackcurrant, graphite, and fresh herbs, underpinned by tight yet silky tannins and an undeniable length on the palate. The Three Pines cuvée, from the estate's highest-altitude vineyard, is considered the property's "premier grand cru", intense aromatic concentration and a structure that demands patience. The Syrah, born from a parcel scattered with river pebbles, offers an elegant and floral profile, halfway between the northern Rhône and the Cape coast. 

Stark-Condé is proof that with an exceptional terroir, patience, and very little intervention, a self-taught winemaker can rival the greatest houses in the world.
