History
Since 1921, the Cave de l’Étoile has embodied the excellence of the Roussillon’s sweet natural wines. Nestled in the heart of the schist slopes descending to the Mediterranean, it showcases Grenache and its companion varietals. The 2007 vintage highlights the richness of a traditional semi-sweet Banyuls, combining indulgence and balance, perfect for lovers of characterful wines.
Vinification
Old vines, over 40 years of age, yield a blend dominated by Grenache Noir (75%), complemented by Grenache Gris (15%) and Carignan Noir (10%). The grapes, destemmed and crushed, undergo mutage on the skins followed by a long three-week maceration to concentrate aromas and structure. Aging takes place in demi-muids and old oak barrels, bestowing oxidative complexity and aromatic depth.
Tasting Notes
As a semi-sweet style, this Banyuls charms with fruity notes of orange and light cocoa. On the palate, it is both smooth and balanced, expressed with fine freshness and a harmonious finish. Ideal as an aperitif, it also pairs beautifully with Fourme d’Ambert, aged sheep’s cheese, or chocolate- and coffee-based desserts such as an Opéra or a fondant. A gourmet cuvée that reveals all the elegance of the 2007 vintage.
Italie
