History

The 1961 vintage, considered exceptional in many European vineyards, also left its mark on Banyuls. From the heroic schist vineyards overlooking the Mediterranean, this rare vin doux naturel is the result of ancestral know-how preserved by the Cave de l’Étoile, the oldest cooperative of the region, founded in 1921. After more than 60 years of aging, it embodies the living memory of both an era and a unique terroir.

Vinification

Primarily composed of Grenache Noir, complemented by Grenache Gris and Carignan, this Banyuls was crafted in the traditional manner: hand-harvested grapes, destemmed and crushed, mutage on the skins to preserve natural sweetness, prolonged maceration, followed by pressing in a vertical press. Oxidative aging in old casks and century-old barrels allowed the wine to develop its aromatic richness and its signature noble rancio.

Tasting Notes

Its deep brick-red color introduces a captivating bouquet of walnuts, dried figs, cocoa, and leather, enhanced by hints of coffee and soft spices. On the palate, density and sweetness are balanced by remarkable freshness, leading to a long and harmonious finish. This 1961 is a true meditation wine, best savored alone for its intensity or paired with aged Roquefort, fine dark chocolate, or a dried fruit dessert.
