History
A vintage emblematic of the great years of Roussillon, 1981 produced perfectly concentrated grapes, ideal for crafting age-worthy vins doux naturels. This Banyuls, resting for more than three decades in the cellar, reflects the meticulous work of the winemakers at L’Étoile and the unique expression of the schist slopes descending toward the Mediterranean.
Vinification
Predominantly Grenache Noir, blended with Grenache Gris and Carignan from old vines on terraced slopes. The grapes were destemmed and crushed before fortification (mutage) on the skins, followed by prolonged maceration under alcohol. Aging took place in old oak barrels and demi-muids under oxidative conditions. The wine was bottled in January 2016, after more than 30 years of maturation.
Tasting Notes
Deep tile-colored robe with mahogany highlights. The nose reveals a complex array of dried fig, walnut, cocoa, and mocha, supported by elegant rancio notes. On the palate, richness and velvety texture are combined with preserved freshness, leading to a long, slightly spiced finish. Ideal to accompany semi-cooked foie gras, walnut tart, or simply some shards of dark chocolate at the end of a meal.
