Vasse Felix Heytesbury Chardonnay 2023 is sourced from Vasse Felix's most unique parcels in Margaret River, crafted exclusively from the Gingin clone, renowned for its ability to express finesse and depth. Hand-harvested, whole-cluster pressed, and fermented with wild yeasts, the wine was aged for 8 months in French oak barrels (including a significant portion of new wood), and then refined for 7 months on the lees in stainless steel tanks. It features 13% alcohol and 0.85 g/L of residual sugar.
On the nose, a complex bouquet of flint, candied lemon, and fine cream. On the palate, taut and profound, with a long and mineral finish. A great gastronomic wine, precise and elegant, with strong aging potential. Pairs beautifully with seared scallops in brown butter or lobster in a lemony sauce.
