Australia
The Gippsland region is located in the southern part of Australia, to the east of the Melbourne suburbs in the state of Victoria. The total vineyard area covers 187ha and harvests mostly Chardonnay, Pinot Noir and Shiraz. This region has a number of microclimates, which contribute to the elegance and structure of the various styles of grape cultivated in the area. The white wines are particularly aromatic. Meanwhile, the south of Gippsland Pinot Noir is known throughout Australia as being one of the best on the market. While its attack is fine, there is a length and intensity to it.
Le nez est frais, vibrant, et très fruité avec des arômes de fraises et de cerises fraîches, accompagnés de légères touches florales (comme la rose) et quelques notes épices. Il est invitant et très expressif.
Unfined, unfiltered, and full of nuance. Fresh acidity and soft tannins frame notes of pomegranate, rose petal, and spice. Cathedral is ethereal but quietly powerful.
Vibrant red cherry, cranberry, and forest herbs on the nose. The palate is silky and light-footed, yet deep with character. A beautifully natural expression of Pinot Noir.
Nicolas - Local Nose
The Cathedral Pinot Noir embodies William Downie's excellence with its aromas of black cherry, raspberry and wild strawberry. Its silky palate with fine tannins offers remarkable elegance.
