Micro Winerie is an urban winery nestled at the heart of the DARWIN ecosystem in Bordeaux. Breaking with tradition, Maxime Rozé crafts small-batch cuvées here, favoring pure fruit expression and freshness, while sourcing organic, hand-harvested grapes from neighboring vineyards, notably in Entre-Deux-Mers. Zéphyr embodies the lightness and sea breeze of this terroir.
This white wine is a classic Entre-Deux-Mers-style blend of Sauvignon Blanc and Sémillon (exact proportions unspecified, but typical of the appellation). Vinification and aging take place in stainless steel tanks for 6 months to preserve the most delicate varietal aromas and natural liveliness. The wine is grown organically with native yeasts and left unfiltered, ensuring maximum purity.
Zéphyr 2024 is a crisp, dry, vibrant wine. On the nose, citrus notes (grapefruit, lime) dominate alongside hints of tropical fruit. The palate is taut, direct and highly refreshing, with a clean, mineral finish. It pairs perfectly with a Greek salad, salmon toasts, or as a summer wine served between 10°C and 12°C (50-54°F).
