History and terroir
This Pommard Vieilles Vignes 2018 by Vincent Girardin comes from vines aged around 45 years, located north of the village, in the renowned area of Les Vaumuriens, heading towards Volnay. The terroir is composed of very clayey soils mixed with fine limestone veins, offering the Pinot Noir power, depth, and tension. Faithful to the domain's high standards, the vines are managed using the Guyot Poussard method with precise work in the rows, in order to preserve the natural balance of the vintage.
Winemaking
The grapes for the Pommard Vincent Girardin are harvested by hand and then rigorously sorted, sometimes with the aid of an optical sorter. After light crushing and destemming, the berries ferment in stainless steel tanks with cold maceration, careful punch-downs, and pump-overs. Aging then takes place for 15 months in barrels, about 30% of which are new wood; malolactic fermentation occurs naturally there. One month before bottling, the different barrels are blended. As always at Girardin, there is no fining and only slight filtration in order to preserve the purity of the wine. The vintage was brilliantly received by critics: 1 star in the Guide Hachette and 92 points from Wine Enthusiast.
Tasting and Pairings
This Pommard Vieilles Vignes 2018 reveals a dark ruby color. The nose blends black fruits, spices, smoky, and woody notes typical of the terroir. The palate is full, structured, supported by present but perfectly integrated tannins, with a persistent and elegant finish. A distinctive, profound Pommard, which ideally accompanies marinated meats, lamb, beef bourguignon, game, braised ham, and strong cheeses (Époisses, Livarot, Munster). Serve around 14 °C.

Entre les deux, la Côte de Nuits est le royaume des grands rouges, tandis que la Côte de Beaune excelle aussi bien en rouges qu’en blancs. Les Côtes Chalonnaises complètent l’ensemble avec des vins au très bon rapport plaisir/prix.
Ce Pommard s’associe parfaitement avec des plats riches et savoureux comme filet de bœuf ou une côte de veau grillée.
