DESCRIPTION

Sourced from the 'Les Chemins' collection, this cuvée embodies the single-plot approach and the imprint of Man on the terroir of the Côte de Sézanne. 'Le Chemin Empreinté' is a Blanc de Blancs crafted from selected plots, worked with grass cover and soil ploughing to respect living organisms and favor the pure expression of chalk and clay.
The winemaking is a work of goldsmithery: slow fermentation in barrels (12%) and tanks, followed by 10 months of aging on lees. A rare and qualitative fact, the secondary fermentation (prise de mousse) takes place 'under cork' (cork stopper and staple/agrafe) rather than under a crown cap, favoring controlled micro-oxygenation during the 63 months of aging on laths. Disgorgement is carried out manually.
This Extra-Brut champagne (5g/l) stands out for its power, finesse, and vinosity. The cork aging grants it a creamy texture and superior aromatic complexity. It is a great gastronomic cuvée, tailored for the table, which will pair with textured dishes such as Bresse poultry or veal sweetbreads.

Champagne is not only the wine of great celebrations, it is also a region unlike any other in the world, in northeast France. With its limestone slopes and a climate cooler than any other French wine region, it gives wines of inimitable finesse.

The three signature grapes (Pinot Noir, Pinot Meunier and Chardonnay) thrive here despite the harsh climate, thanks to chalky soils that return warmth and minerality. Skilfully blended, they create the most famous of all sparkling wines: Champagne AOC, a symbol of elegance and craft.
