Sourced from the 'Les Chemins' collection, this cuvée embodies the single-plot approach and the imprint of Man on the terroir of the Côte de Sézanne. 'Le Chemin Empreinté' is a Blanc de Blancs crafted from selected plots, worked with grass cover and soil ploughing to respect living organisms and favor the pure expression of chalk and clay.
The winemaking is a work of goldsmithery: slow fermentation in barrels (12%) and tanks, followed by 10 months of aging on lees. A rare and qualitative fact, the secondary fermentation (prise de mousse) takes place 'under cork' (cork stopper and staple/agrafe) rather than under a crown cap, favoring controlled micro-oxygenation during the 63 months of aging on laths. Disgorgement is carried out manually.
This Extra-Brut champagne (5g/l) stands out for its power, finesse, and vinosity. The cork aging grants it a creamy texture and superior aromatic complexity. It is a great gastronomic cuvée, tailored for the table, which will pair with textured dishes such as Bresse poultry or veal sweetbreads.
