Idée Fixe Premier Brut Blanc de Blancs 2021 is crafted from Chardonnay grown in a specialized vineyard in Karridale, Margaret River, benefiting from unique oceanic influences, rare quartz-based soils, and icy winds from the Southern Ocean. Aged for 24 to 36 months, including 21 months on the lees according to the traditional method, it features 12% alcohol and 7.0 g/L of total acidity.
On the nose, green apple, ripe pear, and lemon. On the palate, a vibrant freshness dances in perfect harmony with a creamy texture, accompanied by fine and delicate bubbles. Ideal as an aperitif, or paired with seafood, shellfish, or soft cheeses.
