The Volnay ‘Vieilles Vignes’ is a testament to the aromatic richness and the nobility of the wines of the Burgundy region, specifically the Côte de Beaune. This wine is aged for 14 months and a month before it is bottled, its different barrels are blended and then stored. This red wine is particular, in that it is not fined, which means it was not clarified in order to let the wine express itself more naturally. It is also only slightly filtered, so as to preserve its enriching elements. This wine’s elegance and femininity reveals itself through a romantic perfume of violet, redcurrant, and cherry. Once it has aged a bit, notes of spices and prune marmalade envelop the senses. On the palate, the attack is fresh and juicy, and then bows out to allow the heat to slowly rise for the finish. Imagine biting into the flesh of a ripe fruit. This Volnay is the perfect match for a beef bourguignon or a mushroom risotto.
