Burn Cottage Sauvage Vineyard Pinot Noir 2021 comes from the Sauvage Vineyard in Bannockburn, located below hills once prized for gold and now covered in wild thyme and rosehip. Biodynamically farmed, this wine from 20 to 22-year-old vines reveals remarkable aromatic complexity. Aged in French oak barrels (25% new for 2020, 18% for 2021), bottled unfined and unfiltered.
The nose features delicate floral notes, cherry, red berries, wild herbs, and nuances of black tea. The palate is supple and deep, with well-integrated tannins and a refined finish. Aging potential of 7 to 12 years. Pairs with wild mushroom risotto or Peking duck.
