Casas de Bucalemu Salinas Sauvignon Blanc 2021 is inspired by the ancient salt pans of Bucalemu, located near the vineyards, which during colonial times were the sole source of salt for Santiago. This cuvée is crafted from Sauvignon Blanc on clay-limestone soils of the D.O. Rocas de Santo Domingo appellation, Leyda, 9 km from the Pacific, aged for 12 months in stainless steel and concrete tanks. Casas de Bucalemu is a historic estate initially owned by the Jesuits until 1778 and has remained in the same family ever since. Established in 1858 in the Santo Domingo Valley, 9 km from the Pacific, the current vineyards were planted in 2008. The estate practices organic and manual viticulture on mineral-rich limestone soils.
On the nose, saline and marine aromas, combined with notes of citrus and white flowers, with a touch of Mediterranean herbs and flint. On the palate, a lively freshness with a tense acidity, the intense minerality evoking flavors of iodine, flint, and chalk. It pairs well with oysters with ginger and lime or a white fish tartare with sesame oil. Aging potential of 10 years and more.
