Persan is a rare and ancient Alpine grape variety, saved from oblivion by a few passionate winegrowers like the Quenard family. Planted on the ferruginous clay hillsides of Chignin, it yields wines of a deep color and a unique tannic structure, built for aging.
Domaine André & Michel Quenard vinifies this treasure in a traditional and careful manner. The grapes are harvested by hand and undergo a long maceration (one month) to extract the grape variety's full complexity. The one-year aging in demi-muids (large oak barrels) allows the tannins to develop a patina without masking the fruit, and the wine is bottled without added sulfur until bottling, with no fining or filtration.
This 2023 vintage unveils a racy and profound palate, marked by smoky notes, meat jus, and fresh grape. It is a wine of character that will pair perfectly with rich dishes such as beef bourguignon, game, or duck breast.
