History
Domaine Singla continues the art of natural sweet wines through centuries-old expertise. Heir to the mutage technique invented in the 13th century by Arnau de Vilanova, this 1958 Rivesaltes is a rare witness to the wine history of Roussillon. Made from Grenache Blanc and Gris and Macabeu, it rested for over 40 years in oak casks before refinement in glass demijohns, developing a unique patina.
Vinification
Direct pressing, mutage on the must to preserve the grapes’ natural sweetness, followed by long oxidative aging “under wood.” This patient process allowed the wine to develop complexity, balance, and aromatic intensity.
Tasting Notes
The deep color announces the depth of this vintage. The nose entices with fine spice and candied orange notes. On the palate, the texture is refined and silky, with remarkable length. Served between 16 and 18 °C, it pairs perfectly with blue cheeses, chocolate-orange desserts, pastries with dried fruits, or can be savored on its own as a digestif.
