DESCRIPTION
In Saint Christoly de Blaye, Vignobles Guillaume Guérin farm their vines organically. Their cuvées are named after Greek deities associated with the wind, a nod to the family's ancestors, who were millers at the Moulin des Blais and the Moulin de Rioucreux.
Zéphyr is produced from a single plot of Sauvignon Gris. The juice is placed into 300-liter barrels immediately after pressing to ferment. The wine is then aged for 8 months in barrels, with regular lees stirring to keep the lees in suspension and provide richness.
The nose combines notes of citrus with toasted aromas. The palate achieves a beautiful balance between freshness and roundness.
