DESCRIPTION
Paso a Paso is a labour of love, created by Sebastian Bisole and Norberto Paez, two young friends specialised in oenology and agronomy. Their wines are produced using an artisanal and natural microvinification method, which allows them to ferment their grapes at a limited scale to focus on finding and enhancing the DNA of a specific terroir or a parcel. This process is a far cry away from the traditional Argentinian winemaking methods. The 2021 Malbec ‘Vino de Garage’ was named for the garage where this wine was made. An eleven day pellicular maceration gives this vintage an intense aromatic palette and softens its astringency. The wine is then aged for nine months. The bouquet is filled with fresh fruit, flowers and prunes. Meanwhile, on the tongue, the wine is fresh, light and expressive. Thanks to its maceration style, the tannins are supple and soft. The wine’s attack is straightforward and packs a light punch. This is the ideal wine to drink amongst friends accompanied by a charcuterie board or empanadas. There is no need to have studied oenology to appreciate this special wine.
REGION
Mendoza
Argentina
Mendoza is the largest wine-producing region in Argentina. Located on a high plateau on the edge of the Andes, the province is responsible for approximately 70% of the country's annual wine production. The French grape variety Malbec has its New World home in the vineyards of Mendoza, producing red wines of great concentration and intensity. While Malbec is undoubtedly the star of the region, there are also numerous plantings of Cabernet Sauvignon, Chardonnay, Syrah, Torrontes and Sauvignon Blanc.
