History
In the heart of the steep slopes overlooking the Mediterranean, the Cave de l’Étoile presents one of its collector’s jewels: a 1972 Banyuls Traditionnel. With over 40 years of patient aging in casks and century-old barrels, this cuvée showcases the unique art of oxidative aging, a true heritage of the Banyuls appellation.
Vinification
Made predominantly from Grenache Noir, complemented by Grenache Gris and Carignan, this vin doux naturel was crafted using the traditional method: hand-harvested grapes, crushed and destemmed, fortified (mutage) on the skins, followed by long maceration under alcohol to capture the full richness of the fruit. Prolonged oxidative aging, marked by the famous “angel’s share,” refined its aromatic profile to achieve remarkable complexity.
Tasting Notes
Mahogany-colored robe with tile highlights announces a deep aromatic profile: walnut, dried fruits, candied figs, and mocha, blended with hints of gentle spices and elegant rancio. The palate, broad and velvety, reveals surprising freshness that balances its richness. The finish is long, persistent, and infinitely harmonious. Best served at 16 °C with aged Comté, a walnut tart, or enjoyed as a meditation wine, this rare vintage also makes a prestigious gift for collectors.
