History
The 1975 vintage is soon to celebrate its 50th anniversary, and this cuvée embodies the ancestral expertise of the Cave de l’Étoile, founded in 1921. In this steep schist terroir overlooking the Mediterranean, Grenache Noir, Grenache Gris, and Carignan vines produced a vin doux naturel destined for long aging. A true witness to time, this Banyuls is a collector’s piece celebrating half a century of history.
Vinification
Hand-harvested grapes, destemmed and crushed, then fortified (mutage) on the skins to preserve natural sugar richness. After prolonged maceration, the wine was aged in old oak barrels and demi-muids under oxidative conditions, gradually developing the full aromatic range of great traditional Banyuls. Bottled in January 2016, it reveals the magic of exceptional aging, marked by the “angel’s share.”
Tasting Notes
Tile-amber robe with deep mahogany highlights. The nose captivates with complex notes of dried fig, toasted walnut, leather, and mocha, accented by elegant rancio. The palate is broad, rich, and velvety, balanced by a fresh framework that carries a long, persistent finish with hints of cocoa, dried fruits, and gentle spices. Ideal for celebrating a symbolic anniversary, or accompanying a chocolate dessert, walnut tart, or aged hard cheese.
