Savagnin grapes are a treat for gourmets. If you’ve ever pored over a Julia Child cookbook or craved chicken in a silky morel cream sauce or rich foie gras, this variety is for you. Originating from the Austrian Tyrol but flourishing in the French Jura, Savagnin shines in the sweet, full-bodied Vin Jaune, reminiscent of Sherry, and the nutty, liqueur-like Vin de Paille. Its flavor profile of honey, almonds, flowers, nuts, and green apple pairs perfectly with aged Comté or a Gruyère soufflé. So, get ready for a culinary adventure that will leave you full, happy, and satisfied.

    Savagnin Wine

The Savagnin grape variety is one of the Jura's best-kept treasures, a wine region located in eastern France. Originating from this area, it stands out for its ability to produce unique wines, notably the famous Vin Jaune. Often confused with Traminer, an ancient variety with similar characteristics, it is also known as Savagnin rose, or Klevener de Heiligenstein, when grown in Alsace.

Savagnin is recognized for its small, compact clusters and golden yellow berries. The wines produced have high acidity and notable aromatic complexity, with notes of walnut, green apple, quince, and sometimes spicy nuances.

Savagnin from Jura and its Fascinating Vinifications

Vinification in Jura is a fascinating process, often marked by unique traditional methods. One of the most emblematic styles is Vin Jaune, a dry white wine produced using a method called oxidative aging. After a classic fermentation, the wine is aged in barrels under a veil of natural yeast, without topping up (refilling the barrels to compensate for evaporation), for at least six years and three months. This technique imparts distinct aromas of walnut, curry, and spices to the wine.

In addition to Vin Jaune, Savagnin is also used to produce topped-up wines, where the barrels are regularly refilled to avoid oxidation. These wines have a fresher and fruitier aromatic profile, while retaining the grape's signature acidity and minerality.

Savagnin Rose or Klevener de Heiligenstein

Savagnin rose, or Klevener de Heiligenstein, is a variation primarily grown in Alsace. This variety is distinguished by a slightly pink skin and produces wines often more aromatic than its Jura counterpart. Wines from Savagnin rose are generally rich in floral and fruity aromas, with lively acidity and an elegant structure.

    Savagnin Around the World

Although primarily associated with Jura and Alsace, it is also cultivated in other wine regions worldwide. In Germany and Austria, it is sometimes confused with Traminer and used to produce wines with similar characteristics. In Switzerland, it is often vinified in a style similar to that of Jura, highlighting its oxidative qualities and complex aromas. German wines and Austrian wines made from Savagnin or Traminer are often marked by spicy and floral aromas, with refreshing acidity.

    Prices for a Savagnin Wine

Prices can vary significantly depending on the vinification process and age. Topped-up wines and voile wines from Jura are often more affordable, with prices starting around 15 to 20 euros per bottle. In contrast, Vin Jaune, due to its long and complex aging process, can reach much higher prices, often exceeding 50 euros per bottle, and sometimes much more for rare vintages or renowned producers like Château Chalon.

Dishes for Savagnin: Main Food Pairings

Savagnin wines, with their aromatic complexity and marked acidity, are ideal partners for a variety of dishes. Vin Jaune, with its aromas of walnut and spices, pairs perfectly with dishes such as chicken with cream, mushrooms, and Comté cheese, a flagship product of the Jura region. Fresher and fruitier topped-up wines pair well with seafood, grilled fish, and vegetarian dishes.

This grape variety offers a diversity of fascinating wines, ranging from dry and fresh white wines to complex and oxidative Vin Jaune. Whether in Jura, Alsace, or elsewhere in the world, Savagnin continues to captivate wine enthusiasts with its unique character and multiple facets.
