Although the Côte de Sézanne is the realm of Chardonnay, Pinot Noir finds a singular expression here on south and south-east facing clay-limestone soils. This Blanc de Noirs cuvée highlights the power of this black grape variety, harvested from vines averaging 45 years of age, cultivated with care to reveal the full-bodied character of the terroir.
The crafting of this champagne relies on a great mastery of blending, integrating an exceptional 54% of reserve wines (2019, 2018, and 2013 vintages) to enrich the 2021 base. Vinified in stainless steel tanks and partially in large oak casks (foudres, 4%), it retains its freshness thanks to a partial malolactic fermentation. Ageing for 24 months on lees refines its structure.
Dosed as Extra-Brut (6g/l), this Blanc de Noirs reveals a fascinating complexity, combining the typical power of Pinot Noir with delicate aromas of red fruits. It is a wine that is both vinous and elegant, capable of pairing throughout an entire meal, sublimating roasted poultry or dishes with autumnal flavors.
