The year 2012 will remain etched in the history of Champagne: despite sharp cold and low sunshine, nature gave birth to one of the region's most beautiful vintages. Le Brun de Neuville captures this "imprint of nature" through a rigorous selection of plots located on the Côte de Sézanne, benefiting from clay-limestone soil.
This Blanc de Blancs is composed mainly of Chardonnay (97.5%), supplemented by a touch of Pinot Noir (2.5%). The vinification takes place in stainless steel tanks with malolactic fermentation carried out to provide roundness. The true secret of this cuvée lies in its immense resting time: 128 months of aging on lees, or more than ten years in the cellar, allowing the wine to develop an exceptional aromatic patina.
Upon tasting, the 2012 Vintage offers a unique expression of maturity and preserved freshness. It is a gastronomic Champagne, revealing complex notes and a silky texture supported by a balanced dosage of 6 g/l. It will wonderfully accompany noble dishes such as pan-seared scallops or fish in a cream sauce.
