Tokaj, a wine region listed as a UNESCO World Heritage site, lies two and a half hours from Budapest in northeast Hungary. This land brings together precious elements for growing grapes: a microclimate, volcanic soil and a little known fungus, botrytis, or noble rot. It turns overripe grapes into shrivelled berries and is key to making the sweet wines of the region, called aszú. With their concentrated aromas and sugars, these are the flagship of Tokaj. The region also adds dry Furmint and Tokaji Eszencia to its list of white wines.
