Paso a Paso Abandonos Semillon 2022
DESCRIPTION
The Los Abandonados Semillon 2022 is a project by Paso a Paso Wines that pays homage to the old Sémillon vines of La Consulta, San Carlos (Uco Valley). Grown in sandy-loam soil at an altitude of 1100 meters, these vines benefit from a cool desert climate and low yields, ensuring optimal concentration.
The winemaking process is artisanal and patient: manual harvesting of whole clusters without crushing, natural fermentation in plastic tanks with 60 days of skin contact, followed by malolactic fermentation and 8 months of aging in barrels. Two of the barrels benefit from crianza biológica (aging under a veil of yeast), which adds extra texture and complexity.
Production is limited to 1500 bottles. This intense and complex white wine offers a waxy texture, perfectly balanced acidity, and aromas of ripe fruit, honey, sweet spices, roasted apple, and dried citrus.
It is ideal with mushroom risotto, fatty fish (cod, turbot), poultry in a creamy sauce, or aged cheeses.
