Rebelle dans l'âme, ce vignoble emploie des techniques clean, avec un mantra simple: une intervention minimale. Un cabernet produit avec des grappes bio et biodynamiques, il mériterait qu’on le laisse à la cave pendant 10 ans avant de l’appeler au front (mais ce n'est pas une obligation). Ce vin charnu est la définition même de ‘tanins soyeux’ - il en a autant de couches qu’un millefeuille. Au nez, honneur aux fruits: les mûres, les myrtilles, les fraises et les framboises se mélangent pour produire un élixir puissant. À déguster avec un boeuf bourguignon ou un risotto de champignons sauvages.
