DESCRIPTION
CO CO PA Cinsault 2019 comes from a small parcel of old Cinsault vines estimated to be 80 years old, grown as bush vines (goblet), unirrigated and ungrafted, on granitic soils with a 10% slope on the coastal range of Itata. Aged for 15 months in a blend of used oak barrels and stainless steel tanks. Ultra-limited production of 2,994 bottles. Cinsault was brought from the south of France to Chile during the first half of the 19th century. CO CO PA is an artisanal project dedicated to the traditional grape varieties of the Itata Valley, one of Chile's oldest wine-growing regions. The vines, unirrigated and ungrafted on granitic soils, are cultivated on the slopes of the coastal range in Itata. Limited bottle productions to preserve the authenticity and expression of the terroir.
On the nose, red fruits (raspberry, strawberry) with a floral touch and white pepper. On the palate, supple tannins, a vertical structure that keeps the wine fresh, complex, with a beautiful typicity and a pleasant finish. It pairs well with light meats or Mediterranean cuisine. Artisanal and limited production.

La vallée de l’Itata, située dans la région de Ñuble au milieu du Chili, est l’une des plus anciennes zones viticoles du pays. Le terme Itata signifie en langue indigène mapuche, “pâturage abondant”. Les sols des différentes appellations d’origine de cette vallée alluviale sont sablonneux et riches en minéraux et sédiments volcaniques. Ces éléments naturels contribuent à la culture des cépages traditionnels de la région, le país (rouge) et le muscat (blanc). On y trouve aujourd’hui aussi du chardonnay, du cabernet sauvignon, du carménère, du merlot, du sémillon, et du tintorera. Les domaines chiliens de la région créent des produits de grande qualité.
