History
Founded in 1895, Maison Cazes has established itself as one of the jewels of Roussillon, pioneering organic and biodynamic viticulture since 1997. Located between the sea and the mountains, in the heart of the Agly Valley, the estate presents the 1973 Cuvée Aimé Cazes—an emblematic vintage born from an exceptional harvest and craftsmanship passed down through generations.
Vinification
Made from Grenache Gris, Blanc, and Macabeu, this Rivesaltes Ambré was produced through direct pressing, low-temperature fermentation, and mutage with neutral alcohol during fermentation. It then underwent 40 years of oxidative aging in old oak casks, losing more than two-thirds of its volume to evaporation (“angel’s share”), before bottling and storage in a climate-controlled cellar.
Tasting Notes
Its amber color with copper highlights announces a wine of rare intensity. The nose opens with honey, spices, candied fruits, and walnut, complemented by an elegant rancio depth. On the palate, it is full, silky, and indulgent, with infinite generosity and a seemingly endless finish. A contemplative wine, rated 19.5/20 by Bettane & Desseauve and 95 points by Robert Parker. Best enjoyed on its own, or paired with seared foie gras, aged Comté, dark chocolate desserts, or a walnut tart.

Vieillis longuement, les vieux Rivesaltes révèlent des arômes uniques de fruits confits, de noix et de rancio, cette note oxydative recherchée par les amateurs. À leurs côtés, le Muscat de Rivesaltes qui dispose de son AOC propre depuis 1956, propose une autre facette tout en fraîcheur et en parfums de raisin, d’agrumes et de fleurs blanches.
