History
From a sunny vintage in Roussillon, this 1979 Banyuls Traditionnel reflects the heritage of the Cave de l’Étoile, a pioneer of the appellation since 1921. Aged for over 35 years under oxidative conditions, it embodies the patience and expertise of the Banyuls winemakers.
Vinification
Composed of Grenache Noir, Grenache Gris, and Carignan from old vines rooted in steep schist slopes. Grapes were destemmed and crushed, fermentation halted by fortification (mutage) on the skins, followed by a long three-week maceration. Aging in old barrels and demi-muids shaped its depth until bottling in January 2016.
Tasting Notes
The tile-amber robe captivates with copper highlights. The nose reveals elegant notes of dried fruits, fig, walnut, and almond, enriched with hints of leather and light tobacco. The palate, broad and silky, unfolds persistent flavors of noble rancio, cocoa, and gentle spices. Ideal at the end of a meal with Bleu d’Auvergne, a walnut tart, or a connoisseur’s cigar.
