History
The 2014 Juliette cuvée pays tribute to the historic expertise of the Cazes family in crafting natural sweet wines. Sourced from vineyards on the clay-limestone terraces of Roussillon, at the foot of the Corbières, it expresses both Mediterranean generosity and the freshness of this terroir, swept by the Tramontane wind.
Vinification
Made from Muscat of Alexandria (70%) and Muscat à Petits Grains (30%), the grapes are hand-harvested and then destemmed. Fermentation is carefully controlled (18–20 °C) with skin maceration and mutage in liquid phase to preserve the fruit. Aging on fine lees, with regular bâtonnage, adds roundness and balance. Bottling occurs within six months, ensuring a wine bursting with freshness.
Tasting Notes
The pale gold color opens to an intense nose of white flowers, fresh grape, and citrus zest. On the palate, a beautiful harmony between sweetness and liveliness reveals notes of honey, peach, and exotic fruits. The finish is long and fresh, marked by the typical character of Muscat. Ideal as an aperitif, with foie gras, apricot tart, or blue cheeses. Serve chilled (8–10 °C).
