DESCRIPTION
Bouchon Family Wines Salvaje Blanco País 2025 comes from a wild vineyard located in Mingre, at an altitude of 193 meters and 45 km from the Pacific Ocean. This 100% white País comes from vines grown in the secano interior of Maule on very ancient, sandy-loam granitic soils rich in quartz and minerals. The harvest, carried out manually in small crates at the end of March, requires the use of ladders to pick from vines that can reach up to 6 meters in height. Vinified using vertical pressing, fermented with indigenous yeasts, with no inputs, and without clarification or filtration. The Bouchon saga began in 1887 with the arrival of Émile Bouchon in Chile. The family, established in the Colchagua region and later in the Maule region in 1977, perpetuates this history by breathing new life into old Maule grape varieties, such as País, rehabilitating centuries-old winemaking techniques, and paying close attention to the terroir. With three vineyards in Maule, the Bouchons adopt an organic approach, creating singular wines from vines grown without irrigation on ancient granitic soils.
On the nose, fresh pear and green apple, enhanced by a subtle touch of white pepper. On the palate, juicy, lively, and fluid, with a persistent, upright, and authentic finish. It pairs well with artisanal charcuterie and grilled sausages or pork skewers. Serve between 12 and 13°C. Aging potential of 3 to 5 years.
