History
Domaine Singla, heir to a lineage deeply rooted in Roussillon, presents here a rare cuvée celebrating its 60th anniversary. Made from Grenache Blanc, Grenache Gris, and Macabeu, this Rivesaltes Ambré pays tribute to the invention of mutage by Arnau de Vilanova in the 13th century. The clay-limestone terroir scattered with pebbles, bathed in Mediterranean sunshine and swept by the Tramontane, imparts a unique character to this wine.
Vinification
This nectar was born from direct pressing before mutage, preserving the grapes’ natural sugars. Its “long and slow” aging lasted 40 years in oak casks, followed by refinement in glass demijohns. A patient process that reveals the full nobility of old Rivesaltes vintages.
Tasting Notes
Its amber robe with old-gold highlights is immediately captivating. The nose reveals notes of sweet spices and mocha, carried on the palate by aromas of brandy, rum, and dried fruits. The balance between power and freshness leads to an exceptionally long finish. Best enjoyed at the end of a meal, with foie gras, almond pastilla, Auvergne blue cheese, or a chocolate dessert.
